The challenge with pocket watches was gravity and the watch remaining in the same position throughout the day. Breguet tackled that with the tourbillon.
Mitch you're correct that highly-accurate mechanical watches aren't groundbreaking. Both my FPJ chronometer sovereign and Ebel 1911 BTR chrono are within 2-3 seconds a day. However, the relentless exposure to electromagnetism is the "pocket watch in the same position" problem of modern times. Everywhere we go we're exposed to TV, computers, cell phones, etc. The materials used, the construction and testing of the Omega master series (METAS) is admittedly techy, unsexy but look closely and you'll see that Omega has advanced the watch movement to withstand the effects of everyday life in our modern times that could negatively effect accurate timekeeping.
