The optimal number for watches to have follows the so called "watch number axiom" and equals the number of watches you currently own (n) plus 1=n+1. The "grail axiom" then states that the "+ 1" watch is a grail watch, until it becomes part of n.
Only when the law of scarcity kicks in, i.e resources are limited yet another grail watch is found, n might exceptionally reduce to n-1, with the "- 1" watch being an ex grail watch, but you do not remember why it was one.
