Please remember Graham, as a former law enforcement person, understandably takes a strong stand on these things.
Let's respond to your original assumption - there's a problem with your strategy. It's that the best watch to take apart is a good one.
Bad watches, and fakes are CRAP, do not help you in any way to understand or learn watch repair.
They simply frustrate you, because they are not built to be taken apart, or even to work.
I'd toss it or hammer it, then go on the old auction site (or look in family jewelry box) and pull out an old Elgin, or Bulova, or something of that sort.
Have fun with it, instead. It will be a much more productive use of your time. If it doesn't go back together, well there are options .....
