The 3350/3357 are model numbers; the numbers are mostly arbitrary to Breguet's own naming nomenclature. Does it really matter why BMW calls their car a 5-series? Why didn't they chose a name like 55 series or AA-series? Why does Audi call their car an "A6" instead of a "F6" or some other combination of letters and numbers? Why are my airline flight numbers the flight numbers they are?
The 1191 is just a serial number that is assigned to the watch and entered into its archives. These serial numbers are not necessarily sequential. And does not indicate your watch was the 1191st Tourbillon made.

Thanks for your response. That makes sense. If the numbers are ascending but some are skipped, then at least you have an upper bound, that is, the 109th is at most the 109th produced, if not earlier.
