What I did with my AP RO 5402 (3 A series and one B series): specify very clearly "part-by-part" i.e. ....
..... what to do with the movement, what with the case, what with the dial, what with the hands, what with the date disc, what with the crown. On two watches we ended up with an agreed disagreement and I took them back and gave them to my godfather of watches. The two they did at AP turned out to be the most amazing overhauls I have ever had.
What you write in terms of instructions you gave is that you asked them to do the movement and to not refinish. But what does that mean when it comes to replacing hands? (They are replaced and watch companies will do this as a standard unless you explicitly forbid them to do so). It will be tough to make things un-done now. And to be honest: it looks good!
