I prefer the 37mm handwound Saxonia or the 1815 up/down
I have the 1815 up/down in rose gold, but prefer the 37mm handwound Saxonia. I keep the 1815 because I like the Arabics and my Patek 5127 has stick markers, so the 1815 fits my collection better. If I didn't have the Patek, I'd buy the 37mm Saxonia. I don't like the Grand Saxonia - too much open space on the dial, imo, plus I love the Lange hand wound calibres.

The pure essence of Lange
I think that the essence of lange can be seen in a better way thought the traditional 1815 without reserve indication. Its the perfect watch. Of course the new 1815 is so good than the old one.

Between the two, I'd choose the 1815 up/down as well, but
take it (and all the either or advice you ever get about watches) with a grain of salt. Some prefer handwounds, some autos. Some numbers, some markers of another sort. Some big, some small. This is the beauty of it all. One thing is certain -- ANY Lange y...
Up/Down
Though it is a handsome watch, the eccentric seconds of the Sidestep with no counterbalancing sub-dial is un-Lange to me. Again, though, that's my preference. Doesn't have to be yours. Best, Jed
