Watches started out round (even almost spherical) probably as derived from the circles defined by the motion of the hands. 

Then someone had the brilliant idea "why not square?  It might look good", and it did

But still the movements (in these cases at least) remained round.

The business advantages of leveraging movements into different watches outweigh the design kudos of having the movement and case shapes in harmony.
