Recipe time: Coal-baked potatoes

 

Next time you have an open fire in winter try this recipe. When I was a kid we used to do it in the campfire, but we more often do it in the lounge fireplace.

Smear whole potatoes in butter (or bacon grease for extra flavor) and wrap them in a double layer of aluminium (tin / aluminum) foil and throw them deep into the fire buried by hot coals.  [You really need coals, so wait until the fire is well established.] Bake for 50-60min until soft.

To serve, halve the potatoes, top with extra butter, salt and pepper or a dollop of sour cream and chives. And scoop out with a spoon and enjoy the smoky starchy goodness.

Follow up with some toasted marshmallows and you will be in campfire heaven.
