003 is a nice GS but ... it's not in the same league as 005 and 021, IMHO
This texture has been already used on a black dial, for SBGH005, while 005 and 021 are unique.
The color variation is much more wider on both green and red dials.
Concerning the background to show the razor sharp hands, have a look below ...

It's more interesting that we all have different preferences
I do see your point on the black dial being used in the SBGH005 first. By the same logic, are the dials on 005 and 021 truly original? New colours-sure; but it's the same pattern. I had multiple opportunities to pick up a 005 and I passed, never considere...
As you said it's just a matter of personal preference.
