As for your question, I think if I get a 5960 that I would do both. Sometimes leaving the second hand running for more animation on the dial and having a look on the parts slitghtly hidden when the hand is at its 0 position, and sometimes just standing reset.
The nice thing is that we can do both on that movement without wearing the movement too much or impacting timekeeping.

Well, thank you for this advice. Patek says you can make it run but a Non-AD told me not to today. ADs say all kind of cr** so I needed to check... And do both. Sometimes it runs sometimes no. Personal mood depending

I think for the 5960 caliber, it allows the second hand to be running without damaging the mechanism. I recall this is not recommended for some brands and calibers, hence need to check first. As for me, I'm like you, depends on the mood..
