5041G should be way rarer than 5040P

I have had the chance of owning both references. I had owned the white, red and platinum, but they are all gone to other homes, leaving the 5041G with me. Don't know about the total amount for the 5040P, but I think it's not as small as you think, coz I did come across quite a few some 10 to 15 years ago. As for 5041G, I do manage to find some literature to support its rarity.
According to the article "Ref 3940 Perpetual Calendar 20th Anniversary" by Dominque Bernez, then Deputy Chairman of Antiquorom, published in VOX, Spring 2006 :
".... for those who dream of owning 3450 but cannot afford it, I would recommend buying the 5041. It has all the qualities required to become a real collector's item: design, technique and rarity. This watch is very similar to 5040 as far as the shape is concerned but with a different bezel. It was produced for a very short period of time and only in white gold with a black face. The total production is not known, but it is assumed to be around 30 to 50 pieces. The actual amount is probably closer to the lower figure. This makes 5041 the rarest of all perpetual calendar watches ever produced by Patek Philippe in their normal production".
