It feels so good
When I do not care about the Rolex release. 15 years ago it was so cool when they present the watches and you could buy one

That's one way to look at it...
I still believe that Rolex makes a very good watch at a not unreasonable price. But the availability is sorely lacking.
I'm glad I bought mine decades ago for almost a tenth of what they go for now...

I like the ones I have and have no burning desire for the new models.
The current purchasing process does take enjoyment out of the experience.
They could come up with the perfect watch and what good would it be if you have to wait years or overpay scalpers? I miss the "old" days that actually weren't that long ago. Does this mean we're both getting old? I mean I know you are but me too? I guess so...lol!

After owning more than a dozen over the years I think I can say I was once a fan, but I gave up on Rolex a couple years ago when lack of availability drove the market to stupid prices.
I do enjoy the two 30+ year old Oysters I still own but can't imagine ever wanting another Rolex, except perhaps a Cellini--a Rolex that doesn't look like a Rolex and remains reasonably priced, escaping the current Rolex hype. I no longer have any desire to look like everyone else in the crowd.
Now that's more my style! My friends would think it's a Timex and I'm fine with that.
I even liked the Cellini line back in the '80s but back then I wanted everyone to KNOW I was wearing a Rolex. Today I really don't care what they think.

I mostly have what I want when it comes to Rolex. I'm pretty satisfied. I did just sell my old 116660 DeepSea (a silly watch) to get a new 126660 James Cameron (an even sillier watch), but I had been thinking about doing that for several years, ever since the earlier D-Blue 116660 was first introduced. This 126660 that I bought last week was the first brand new Rolex I ever purchased. I bought it new, from an AD. I did this only because I know the AD and so it was an easy purchase. Otherwise I'd never play today's Rolex game. It holds zero appeal.
This is a good excuse to post my "parting shot" -- that photo I took right after getting the 126660 and right before shipping the 116660 off to her happy new owner:
Yes, lol! Buying the DeepSea is like giving the Rolex marketing department a giant tip / gratuity...
The DeepSea is a completely unnecessary, overengineered, superfluous watch. I remember laughing hard back in 2008, when I first saw the 116660. And when I was done laughing, I started looking for one, because I thought Rolex executed the concept really well. It looks ridiculous on my small wrist, similar to the Omega Ploprof -- see below, where the lugs overhang my wrist a bit -- but I don't care. It's fun to wear anyway.
What was your main reason for selling it?
Thickness & top heavy feeling on my 7.25" wrist
And, I regularly wear 46-48 mm watches which are nowhere near as uncomfortable as the Deepsea.

I feel same for different reason
I have two Rolexes that make me feel very accomplished. An original Kermit and 2nd gen Cameron. (I also thought the Deepsea was insane when it debuted, but the BLUE gradient dial AND 2nd gen modifications changed all that! BTW, mine fits my wrist beautifully, is exceptionally comfortable, and does not seem too large. I think it is my all time favorite sport watch.) I have owned other Rolexes, but settled on these. I see no sale of them coming.
It is a combination of this, and Covid (being more grateful for what I already have, 'allowing' myself to be satisfied, when before Covid, I simply could not, and related shifting priorities) , AND what you say in your post... AND, honestly, the changes to most models being so infinitesimal as to be make one feel unmotivated...
I saw the new Subs and thought, hmmm nice. And moved on in my day. And for myself, too, it was the very first time since I started collecting, that I felt nothing much at all.
Personally, I am not overly frustrated by the difficulty in finding a Rolex, because it has always been this way, for any Rolex except the black Subs, which are now also impossible. But to me, it's all the same. You politely pester the AD of your choice, and usually by surprise, you get a call, and it's always been that way...
I still very much admire the evolutionary changes in the Subs...
