Definitely Bhutan is a step back in time. Tibet as you know has changed a lot over the years, especially since the train now connects it with the mainland (about a 30 hour trip from Shanghai where I live).
One thing I would prepare for your trip is lots of small packets of chocolate (M&M's/Snickers or what not). Helps with the altitude, and also is a great small gift to give to the apprentice monks you'll encounter. I also brought a whole big bag of disposable ball point pens (the ones with three colours, red/green/blue, in a single pen). These I gave to all the children I encountered in the villages/schools.

Yes, that would be nice. In fact, decent WR (I'll certainly accept your baseline of 10 bar or 100m) and anti-magnetism (for all the electronic devices we play with nowadays) should be considered the two essentials of all modern watches!
