I probably should have mentioned that I do increase the DOF a lot for these multi-watch shots by choking down on the aperture so that I can get everything in focus with a single exposure.  That creates a bit of a risk of diffraction softness in the image, but since each watch is such a small part of the total image that's a lot less important than when one watch fills the entire frame and you're trying to get everything super-sharp.


You should absolutely use a tripod, and in the absence of a light tent sheets of paper do work!
