I have the JLC 751 caliber as well on my Master Compressor chronograph. To prevent the minute hand from jumping when setting the watch move the minute hand 5 minutes beyond the desired set time and then move back to the exact minute marker before pushing in the crown. This will realign the gears and prevent a “jump”.
