I have several of Maria and Richards watches. I am surprised you could not get a date with a pilots watch. There are always cost trade-offs and maybe that is the reason, but normally you can get the Habrings to quote this.

To your question:
With the dial and hand color options, I prefer contrast. I have had the rhodinated dial and hands and it has a cool look but can be difficult to take a quick look and read. Blue over black may require a little longer to focus on. I hate talking to someone and trying to get the time off a quick glance to my watch and then staring for a few seconds. Manual or Automatic is really a choice on what you like and how you plan to use the watch. For a daily watch with a date function, I prefer an automatic. We all need a daily bullet proof watch. My COS with date is an automatic I have worn for several years (enough that it is back with the Habrings for cleaning). Other watches like a time only or complication like the Doppel 3 or tourbillon, manual is the way to go. Personally I like manual watches.
