A Lange is what you need
As you have a PP and a VC, I think a Lange - Richard Lange or 1815 with complication - I think is what you need.
Blancpain
I belief a blancpain either bathyscape or Villeret would be a nice add on to your collection
I‘d go for a complication. Perhaps a perepetual or annual calendar, a split seconds chronograph...
Then decide if you want to do this by extending your Patek collection, or diversify to other brands. Maybe a Journe or Ferrier? Or you want to go vintage, with another VC, Patek, JLC...? Best, Daniel
