Never ever use pancetta and ricotta. Mortadella is fine as well as parmesan, instead use some pork

Don't get me wrong, you can fill them as you prefer, but I'm from Bologna, city of tortellini, that's why I am so obsessed 😅😅😅😅😅 Cook them in broth, not water. Ricotta is fine for tortelloni, with parmesan, eggs and parsley.
