Not something I expected since it is hardly standard practice in every country
It originated in Poland
Cossacks in what is now Ukraine, but was part of Poland previous the partitions, used to prepare it by putting a piece of meat under their saddle.

I heard of the same preparation method but used by Mongols / Tatars already before. But got no sources either way
