Welcome...and thanks for the post.

I've read twice and pondered for a while about choosing a birthday present for your wife.

You have started with :

1) Budget USD5K
2) A specific brand & model : Chopard & Two O Ten....

IMO, as this watch is for your wife, which I believe you hope she will wear as daily or if not as often, my feeling is, it should be something she likes. And secondly, the watch should be a pleasure to be worn without causing her much 'trouble'.... this will add another factor, will it be a mechanical or a quartz?

As a specific brand and model was mentioned, has she shown preference to the Two O Ten?
If not perhaps you could provide the reason/s so that we can understand .

And about reliability of the above stainless steel piece  (11/8464) you attached, it contains the robust ETA quartz ( with battery life of 18 to 24 months).  So reliability is not an issue...and at this point, I guessed you want her watch to be 'trouble-fee" for a long while.

Chopard is not only strong in the jewelery, they are equally competent in mechanical watchmaking (has developed and manufactured  their own movements).  Coupled with their expertise with jewelery, the work done is exquisite and of fantastic finishing. 

Well, all the above pointers are rational stuff, let's not forget the emotional aspects, which will give the wearer the greatest pleasure. 
So perhaps you might want to ask : "how will the recipient feel when she put the watch on?"  
Now rotate the thoughts with the other 2 montres....assuming you know your  wife's 'taste'.

To me, end of the day; what is "the better watch" in her mind?
