With only 800,000 citizens, AMS is a small city but the 19 Million visitors per annum make for crowded everything. We went in a cold, wet, week but still could not get into some restaurants.

Apart from the raw herring sandwich, bitteballen fried cheese balls and one fancy upmarket rijsttafel (Indonesian rice table), we couldn't try more Dutch cuisine. 
Being in an ancient port city, we ate German wurst & schnitzel, Chinese dim sum, Japanese sushi & yakitori, and Spanish tapas.
The one big thing I discovered was that draught Heineken beer tastes different in Amsterdam from anywhere else in the world. 
I've visited Heineken breweries in other countries so did not do the original brewery tour but did have a drink or three at the oldest tavern in the city. Nice!
I felt too ill to do the Gassan Jewellers tour.
