Having owned the titanum Bathyscaphe I can confirm the features you mentioned - it is an under the radar kind of watch, though I personally did not like it on the sailcloth strap, preferred the green Nato or the Blancpain Super Trofeo Alcantara strap:
Both, the ceramic and the Sedna gold Bathyscaphe are more of an eyecatcher, but still humble and not shouting for attention. I have seen the gold version on sailcloth and deployant buckle, and I liked it a lot. The clasp is heavy, solid and functional, that's why it boosts up the price of the Sedna hold Bathyscaphe quite substantially over the tang buckle or Nato strap versions.
Owning a ceramic Bathy Chrono for almost a year now, I am still,impressed with this watch. It received a lot of wrist time and it had no issues at all, the brushed finish looks amazing.
Well, it's a difficult but enjoyable decision you are about to make ;-) Personally, I would opt,for the Sedna gold Bathyscaphe, if funds allow it. Second to that the ceramic. Maybe you can even track down one of the rare first generation ceramized titanium Bathyscaphes:

I would hesitate between the titanium and the rose gold. And I would go for the titanium. Why? First because black watches are not my taste. I find them too trendy. And I'd fear to get rid of it quite quickly. Rose gold is cool, but ks it really consisten...

I like the bracelet version as well, but gray dial and steel still falls slightly behind these other iterations form me. I am sure the bracelet balances the watch out better but for a large watch like this I believe strap is the way to go in terms of comf...

At the moment a black dial fits more into what I would like to add in my small collection. But the blue is gorgeous.
