I am also very partial to time only watches. Among independents, I would also add the name of Laurent Ferrier and the Galet Micro Rotor. Of course, not everyone prefers an automatic winding timepiece in this category. Between your two offerings, the choice is a tough one. I have owned the FPJ CB and enjoyed it very much. I loved the hard wearing tantalum case and unique movement architecture, and in gold no less. The Credor (I have played with the PT piece in the metal) wins in terms of finishing of course, and that magnificent porcelain dial. I think of the FPJ as perhaps a bit more friendly for everyday wear, but the Credor may be the better dress piece. The CB also enjoys a healthy value on the secondary marker, so if you ever decided to part with it I would think it would be easier to sell, and at a more predictable price than might be possible with the Credor.
I also agree that A. Lange & Sohne makes some wonderful time only watches. Along with the 1815 and Saxonia, the original Langematik was available as a time only watch (no date), with a beautiful automatic movement and handy zero reset function. In the high price range is the Richard Lange Pour Le Merite, with the stupendous fusee and chain. My favorite though, at a less imposing price, is the simple Richard Lange. 3 hands including center seconds. Complete focus on chronometry and finishing, done on an industrial scale. It doesn't have the bold design cues of the FPJ or quite as much bespoke artistic provenance as the Credor, but it is an overbuilt and technically prodigious option in the time only category.
