So I reached out to Lange and got some answers directly from them about my watch. Will post here for future reference. Again this is about my specific watch so not universally applicable. The numbered responses correspond to my numbered questions in the original post.
1. Yes, it is safe. The position of the crown doesn`t matter and it doesn`t matter if the watch is running or not.
2. No, there is no certain time because the moonphase is moving constantly.
3. It does depend on how deep you push the pusher. By pushing very smooth or just a little bit it will advance for one day but fully pushed it can advance up to 3 days. This might vary for every watch caused on different position.

In Patek I’ve seen a You Tube video for setting an annual calendar. It states that date window is under motion between 8 pm to 2 am and one should not change date during this period. Moon phase mode is under change from 9 am to 12 noon, therefore ideally ...
