From the pure empirical point of view ...

 

Since I'm just a watch aficionado, here is my experience, since nothing annoys me more than a minute hand mismatch.

For 7750 based and other ETA non chronos, is set the minute hand backwards and it works.

For Rolex movements, JLC, Omega 33xx and GP chonos, set the minute hand forward.

Omega on some DD chrono modules, like the NZL 32, there is a specific lag in seconds documented on the user manual.

Of course, it all depends on the gears lag. Old watches, with a lot of lag may require more testing.
