Somewhat similar to what lead me to service my AP Survivor...
The watch ran great and kept proper time on my wrist. But soon after taking it off, it would stop running. And it definitely had power reserve. I can't recall the specific reason the watchmaker told me causes the condition, but a general movement overhaul fully corrected it.
That is my concern with your piece, to have it serviced multiple times and still have the issue... maybe a movement part had an incorrect tolerance or something. Very strange. I have always found Ulysse Nardin's quality to be exceptional.
