Like high-end Hi-Fi, and particularly amplifiers, it's becoming all the rage to modify machines to improve temperature stability, set pump and boiler pressures more accurately, install custom restrictors to increase steam pressure (at least on E-61 machines that I am most familiar with), etc..
Do you feel there have been significant improvements in the coffee and, in particular, what aspects?
Loved the video, and it's endlessly fascinating to me how we all have our own styles to get the coffee to taste the way we like it. Have you attended any Barista Competitions? That's a lot of fun as well, and I always get ideas to try.
