The case and the movement are the difference...
The 5107 has got a flat bezel and the 315 movement with a less stressful beating 21.600 beats.
The 5127 has a convex bezel and the "modern" 324 movement with a higher beat ratio of 28.000.
I personally prefer the 5127 case, but the caliber 315 as it beats less stressful.
Having said that: one should be happy with both of them.

Hello, I am the proud owner of a White Gold 5107. I have admired both watches for a long time. Both are stunners and would make most collectors very happy. The 5107 was released in 2002 in the large for Patek size of 37mm. It came with a 315 auto movement...
5107 or 5127: PP at it's best ..
Both are THE epitome of a classic watch! At a size of 37 mm they will stand the test of time and represent what PP stands for: true elegance. A very, very pretty watch ... Regards Moritz

The 5127 is the most beautiful design I have ever seen in a watch - breathtaking. I have a thing about not being able to tell the time in the dark, but if it had luminous hands (5146), it would be perfection...
