Tony, I have the same question too.
Certainly, the only way to get a confirmed answer is to ask PP service center (I shall do so on my next visit to them while getting my newly ordered aligator strap).
But thanks to PP, we can now download the user manuals of various current references from their official website and have a better understanding in how to set up different watches.
According to the manuals, 5140 will have the calendar displays changed from 3pm to 2am daily, and 5159/ 5496 will have the change from 8pm to 2am daily. Since the timing of moon phase advancement is not mentioned separately as in annual calendar, I assume the moon phase will advance in that time frame as well.
So I guess for all perpetual calendars, no matter the movement is 240 or 324 based, the moon phase will change in the afternoon or evening, instead of in the morning (around 9am to 11am) as in all annual calendar.
May be that's something related to the different modules added in perpetual vs annual calendar, even though in both complications, the moon phases have the same accuracy up to one day deviation in every 122 years!
Will come back to this post again after I got the answer from PP
