It's just positional variation.
When you wear the watch you keep it in a certain combination of positions. When you put it down you probably put it down in a consistent position. That combination, by coincidence, results in good timekeeping. On the winder, however, the watch rests in many different positions, some of which may be less advantageous for its rate.
