Thanks all for taking the time to answer my query. as previously stated there has been a lot of thoughtful advice.
My thoughts now are that I don't think I can go too far wrong continuing with the winder.
I will indeed contact Patek and pass the question to one of their watchmakers in the near future.

Why don't you simply contact Patek Salon and pass the question to one of their watchmakers. At least there must be a reason why the perpetuals are delivered with a winder. Best, Kari
