both will take 19mm straps at the closing end, which makes the width interchangeable.
The latest reference sheets don´t include notes on the length of the clasp, therefore best to do is to get in touch with your AD.
Personally i´d suggest to consider the bracelet variants of the Evo3!
The bracelet truly makes a difference and it´s a very nice comfortable piece. The other benefit is buying the watch on bracelet usually is less expensive than starting with a model on strap and adding the bracelet later.
I´ve not done so before, but several GP´s do come with a double folding clasp.
As far as i can see, these are mainly 1mm less wide and thus will not match the rubber strap of the Evo3 "out of the box".
But it might be possible to take away a bit of the strap material to make the clasp fit, with the result of having a pretty comfortable and secure clasp.

These buckles measure 18mm regardless of what the catalog says.
My AD in Cleveland measured his and guess what? 18mm

actually there is a variety of folding clasps in different sizes of 18, 19 and 21mm for the varying straps of GP´s different models. The devil is in the detail, although all do look almost identical.
Therefore the most easy way to try a given clasp with a strap, particularly when switching from rubber to leather straps.
The Sea Hawk II ref. 49900 is fitted with rubber straps of 19mm width, thus i´d guess the width of a (matching) clasp not to be less wide to make if fit properly.
But as said, best to do is to give it a try!

IMHO this is what I believe to be the facts…
My 4990 series Sea Hawk II came NIB with a 21mmx18mm curved strap and single fold deployment.
Both lug ends of the strap are marked 21mm and the long, Girard Perregaux, the short GP trademark.
My AD, Picciones, has measured their rubber straps and both tang and single fold deployments and they match.
We now believe that the double fold bracelet and matching, somewhat thicker, rubber is the 19mm indicated.
Meaning that you buy a combination strap and buckle and that you can buy either, and the strap determines the bracelet.

the Evo Moon does not take a strap.
Well, so far - as soon as there will be a gold variant, i´d guess there will be a leather strap. Not that i know whether there will be one or, if so, when!
Just that i´d guess it would be an interesting extension to the model and gold is a natural fit on leather!
But so far, there´s just the bracelet.
I think it´s a very nice bracelet, though
