The self-contained 'Rieussec' room is good, in my opinion, for mass manufacturing pieces.  The process is controlled and the learning experiences of the same group of watch-makers are focused and 'cumulated' within a cluster, thus forming a knowledge-base on its own. Accountability is also tagged too.

As you mentioned, the miniature assembly line 'disturbed you', I'm happy to see it.  The yield should increase thus reducing potential field-reject when the models are being assembled by the same team who does the process repeatedly. 

You reminded me, probably, there should be another term before 'watch-maker'.  From my observations, this current era, the profession may be considered as watch-assembly technicians, as from old books, a watchmaker could design, fabricate from raw material and complete assembly.
Its just like the cockpit should be renamed with female-pilots onboard.
