Basel 2020 may see the launch of what you are looking for. Currently you could to look elsewhere - JLC has simple dress watches in SS, consider Calatravas in PM, or go more complicated and/or preowned if it has to be a Calatrava in SS.
More complicated would include the weekly calendar 5212 and the recent limited SS travel time 7234 from the 2019 Singapore exhibition.
Preowned would include the limited 5522 from the 2017 New York exhibition and the earlier limited 5565 both of which tend to show up in unworn condition. Attractive earlier / vintage options include the limited 3718 and 3417, 3466, 3483, 570, and 565.

If a person wanted a PP Calatrava which one would be a good one to pick up? Time, or time/date only. Prefer stainless steel on strap. New, not pre-owned.
Lots to choose from...

5196 5296 5227 5119 You'll strike out with SS -- for the most part -- unless you go vintage. Pre-owned, check out 5127 and 5107.
SS Patek Calatrava?

Hardly an entry-level point as the rest have pointed out! A 5196 would be a nice place to start.

As you had mentioned steel on strap

it would have to be the 5212/1A, the only steel model in the Calatrava range. It is a truly gorgeous piece (yes, yes I know I am biased!!)
