I was in the same situation as you are now.
Sinn has a handful of dealers and none where I live, but I had the chance to see a UX model in the metal in a small shop in Hamburg, then after short deliberating, I clicked the order button on their website for an EZM13.
Sinn design their watches with "function drives form" philosophy and great attention to reliability. For instance, in their diver's watches they allow 0/+10 s/day, which means no delay, so the diver will not run out of time. They use sepcial oil that allow running in very low or hot temperatures.
Sinn use Sellita or ETA movements. ETAs are top grade and on some models, they are modified, On the EZM13, for instance they use ETA 7750 but the minute chrono hand is 60 minutes based instead of the original 30.
Some customisation is allowed, like having the crown at 10 instead od 3 and date windows color.
Must also say that presale service is excellent and that price politic is honest: same price on website and shop.
After wearing the EZM13 as a beater since May 2018, all I can say I'm really impressed with the watch. It's solidly running at an average +1,5 s/day and nothing can break it! Just wish it had tegimented submarine steel case, but this model comes only in 316L steel. The clasp gets scratched easily.
