Raisinée is a thick syrup that is made out of apple and pear juice that
is boiled down under continuous stirring in about 18 hours. 200
liters of juice makes about 20 liters of raisinée. Every fall
when the apples and pears are ripe there are raisinée parties all over
the region where people making it invite all their friends to keep on
stirring a big kettle over a wood fire and generally have a big
party. They start at about 5AM in the morning 'til sometime the
next night when it is done and filled into glasses.
Raisinée is used as a condiment and to make tarts or pies. It is
one of those things where most every family has their own recipe for
gateau raisinée and claims that all others are more or less
un-edable. But you hardly ever get bad raisinée pie. It is
a matter of pride.
