Bearing in mind that most people at 23:54  -  23:59 are not eagle-eyed or alert to watch a date change smile  watchmakers have traded off power (torque) supply and accuracy of beat.

Especially to turn 2 discs for Panorama Date display takes a lot of power to jump instantaneously, so they don't try to do that. Some designs "store" the power in an additional spring (about an hour beforehand) that releases instantaneously at midnight. That would reduce the torque from the balance wheel for that hour and affect the rate of the balance.

Some mechanisms have to do that as part of the TIME display e.g. Jump Hour but they do rock rattle and roll 24 times a day...a bit of a shock to the system.

If accuracy or constancy of beat is the primary role (timekeeping) rather than date display at midnight, the solution taken by most is a slow advance of date as seen in your watch.

Better to be accurate or constant beat for 24h than having a "perfect" instant date jump.
