I was also trying to think of some possible Patek MOP dials for men, but couldn't come up with any recent models (though there must be something I'm forgetting! :-)

For ladies it's not so uncommon, like the 7200 LE you mentioned, or even pieces from the current collection... For instance, there's presently a Gondolo 4972, or the Aquanaut 5072, or also this beautiful 4899 in the Calatrava collection:
But all *way* too feminine for me as well, I'm not sure I was the intended recipient! ;-)
I should definitely ask to see some of these MOP Journes once I pass by a Boutique, if they have anything to show me! Cheers.
