Hello back everyone ;
After going to Breguet's shop, the vendors told me that the noise was perfectly normal ;
To reassure me they offered me 5 models to try to wind myself, the ultra slim tourbillon included, which does a lot of noise !
So everything is going perfectly good, they also measured it again and the watch gaves an accuracy of +/- 0,7secondes, so super super good !

Mine is in the safe, so I can't try winding it right now.
However, I don't remember ever having the issue like yours with my 7147. When winding it, the experience was not very different compared to when winding my other manual watches. You should bring it back to the shop and do a comparison with the other Bregu...
