Because boutiques and ADs offer only what is in the current lineup. If that is what you want, then that is only what you can get.

And that is if you are lucky enough to get your foot in the door. Where I live, I always get refused if I ask to waitlist for anything, 
so I have I to seek at reputable grays. There, I look, I buy, and the watch is on my wrist on the same day.

In addition, there are lots of beautiful, vintage, antique, not-so-common older and even cute-looking vintage models from the past
that can be bought and add variety. They are still Pateks and age beautifully and can be acquired at more reasonable price points than 
most of the current offerings. There are different ways to build a Patek collection. .
