These are all such very different watches and styles. To me IWC has some great pieces and carries with it a fair amount of history and inovation. I see IWC as a nice choice, for models like the Big Pilot, some of the Ingenieur series, it's perpetuals and the new DaVinci models. Their pieces with IWC Manufacture movements are quite appealing to me and I would have no problem with wearing an IWC.
Cartier is much more fashion driven, though their are plenty of inovative high end models, the more traditional models have not ever caught my eye. I don't know if I will ever appreciate the brand enough to own one. With Chopard, though too a fashion brand, the styles of the last 5 or more years are quite nice. They have really raised the bar with their own LUC Manufacture models and the sporty Mille Miglia series. I personally own two Mille Miglia chronographs and love the style and race inspired tradition they represent.
I think you have some thinking to do, so you can decide on what it is you are looking for. Is it a nice watch with a more unique look and a Manufacture movement along with the inovation that it carries or a couple of nice sporty pieces with more workhorse ETA movements/ features. To me only you can come up with what makes you happy, it is you who has to wear them.

Sound like a good choice, here is my Chopard MM GMT in well worn condition. As far as IWC goes, see what others think of the brand. I have a feeling most comments will be favorable.
