You can pick beautiful pieces everywhere on the historical timeline of Patek.
I've been closely looking at these 5119 and 5116 (enamel) several years ago. The 5120 was interesting to.

I think the 5196 is another classic and one of the key question is how do you like the "Clous de Paris" pattern and how you plan to wear your watch.
Though I like the idea of wear a contrasted way a "Clou de Paris" watch with casual/everyday wear, it seems on the long run that the 5196 can be more secure.
But hey, this is very personal and you make work otherwise.
The 5120 has the 240 which is very nice especially compared to a 215.
As far as I'm concerned Auto and manual are not at all the same for me and can even be the element which would make me chose one over the other.
I think you should take your time, they are all great imho as long as you know what they will need (clothing, winding...) everyday.
