I guess each wine matches each dish or is it the opposite? I know few restaurants (probably more and more), at least in France, which select their wines and, then, create a full menu around them
But the Dauvissat, vega Sicilia, Meo-Camuzet,... Can't wait to open these from my cellar as well (unfortunately mines are way too young, 2010 and younger)
This restaurant is really smart offering an uncountable amount of top and aged wines by the glass, either 8 or 12cl, by using the smart Coravin system. Absolutely ideal for any wine amateur.
