so I chose the easy way with one of those meals where you just cut everything up and throw it in the oven.
Just chicken breast, tomatoes (fresh and dried), red onions, potatoes, olives, zucchini, and eggplant.
I seasoned everything with smoked salt, black pepper, oregano, mustard, balsamico glace, concentrated tomatoes, maple syrup and olive oil. Turned out delicious with a nice balance of sweet/salty/sour.
