It's always wise to exercise extra caution while winding a manual watch.
1,If you see the crown 'spin back' a tiny bit while winding, it's a good indication that the spring barrel is almost fully wound, and it's a good time to stop.
Overwinding a manual watch (when safety barrel is not present) is a big no-no. Because an over-wound spring can only be safely released during service and if the safety pin somehow fails to engage, the sudden release of the mainspring will severely damage the watch.
2,it is not necessary to fully wind up the watch. Modern design is very efficient, so normally a good 10-20 turns of the crown is enough for a good day and a half.

Mine does the same thing as well. At first I thought it was strange that as you wound it the crown would spin back. But now I figured out a technique to help me from it spinning back all the time and make winding more efficient. Cheers.
