Basically, a torque indicator displays the pulse of the mainspring . . .

. . . so that the person wearing the watch can maintain the movement in its sweet spot, winding when it's low, and allowing it to 'settle' when it's high. The Daniel Roth chronograph pictured has a torque indicator sectioned off by colors. The white portion correlates to optimal timing performance.
The best analogy I can come up with is a similarity to the difference between oil temperature and oil pressure gauges in cars. An oil temperature gauge relays information that's useful, but not as tellingly as a pressure gauge. All cars have oil pressure gauges; only ultra-high performance vehicles monitor oil temperature. Yet power reserve indicators are more prevalent in wristwatches than torque indicators. It's a conundrum, Abel!
