A perfect dish with a perfect watch !

I love this one as it is perfectly balanced, like an ... escapement , as it has all the flavours to impress your taste buds, and the other will visually tempt you. Nothing more to add to either, nothing else to leave out as one great adventurer and writer once stated ( St. Exepury ). When cooked to perfection it is like the other thing men enjoy so much ( no its not beer ...) as all 5 of the senses are engaged.
And it is as easy as telling time from a great watch.
Easy on the cooking heat, in Virgin olive oil ( yes you can cook /fry with that as long as it is done with a gentile heat ) simmer the tomatoe`s, stems of the basil , and when the tomatoe`s are softening, add the thin sliced garlic. The garlic MUSTnot turn brown - if so dump in the bin and start over ! . The suff in the teaspoon you dont want to mess with, it must be used with great care as this is not an Asian Hot dish, but just a little Picante in an already great Italian dish. Papardelle cooked 3 -4 minutes to bite perfection and add this to the mixture with the pre fried bacon strips - dried on kitchen paper to absorb the fat as this is Not your usual greasy Italian dish. It is refined , like the watch !
A glass of organic Rose will help you enjoy both the dish and the watch !
If you get it right it will be heaven, savoury, sweet, herbal and a base of garlic, a homerun bullseye etc etc. The same feeling with this 1940`s watch with a beautiful silver dial and golden hour markers, blued hands and a solid val 22 movement. No frings , craftmanship, made to be beautiful and functional, and a joy to the beholder. Like my cooking ;-) And a great cook`s companion with timing this dish !
