I think the one-hand market is very very small, so why mess with building something (under the skin) which caters to it, when you can just "leave off" a few parts and get the same effect?
I've had a few, and they always annoyed me... or maybe bored me, is a better way to say it.
Like this Schauer. Yawn. I liked the concept and the execution was very clean. Brown hand matched the numerals and track on the dial. But it was oh, so, boring.
The Silberstein adds a titanium case, funny hour (and second hand) and the smileday feature which has made it my favorite "minute-hand-less" watch, and the only one I've kept long-term.
NON-mechanical: the YES watch was analog/digital and added daylight / sun-up/sun-down indication as well as moonphase. I had two of them, but the company didn't last long.
