Tough decision!
i am questioning myself these days because I saw a big nice piece for sell, but for big money ...
If I pull the trigger I have to let go several watches of mine. This 1680 is one of them, everything on it does match perfectly but still I wear much more my 5513 that I keep. Would I regret this one? Should I find other way ? Your thoughts ?

Hard to answer without knowing what the other piece might be.
One general rule I follow is I wouldn’t let a vintage watch in good condition go in order to fund a modern piece. The implicit assumption there being the modern piece is more freely available and the vintage piece would be harder (and likely more expensiv...
To me, with anything mechanical old and cool in great condition always beats new and cool. In cool factor and its ability to retain value or increase in value.
The one caveat might be maintenance costs.
Recently
dealt with a similar quandary. I would have needed to sell both my 1655 and 1665 to help fund a Zeitwerk Striking Time. I passed on it knowing that I will miss them, whereas the Zeitwerk will be much easier to procure down the road.

Don’t sell
You can find many 5170s. Your 1680 is a beautiful vintage watch. I have not seen one in such great condition.
