No they cannot tell you: first because they have no clue (even if they are a Patek salon!) how many 5167 they will receive next year or the following ones.

Second, because with the only exception of 4 to 5 people in the entire world (one of them being the head of the *Geneva* Salon, not Paris), nobody knows which references will be in the catalog even in 6 months from now! For instance, this is the time of the year when *a little* more than 5 people (all of them way above the AD level or the Salon staff in Paris, I guarantee you) are informed of which references will be discontinued in 2021. And they have to keep it a secret, of course.
Third and final, waiting lists don't exist, at least in the linear way one would imagine! That is, normally you don't have a guy at number 1 getting the first watch that arrives at the shop, then a guy at number 2 getting the one after, and so on, down to guy number 2394 who will receive an Aquanaut in September 2402.
I can't expect a single AD in the world adopting a system like this -- simply because they would be crazy to run a business this way.
I'm sure at the Paris Salon they've been honest with you and saved your contact information, along with that of hundreds of other people. But my friend, for as long as existing customers ask for a 5167, they are *very* likely to get it first. More than this: if tomorrow someone *totally unknown* buys half of the Calatrava and ladies references in the shop, you can be certain that they WILL get the next 5167 without being on some nonexistent list! ;-)
So given all these variables, how can they tell you (in good faith) when you will receive a 5167, even with a margin of error of 25 years? When I hear of people being told by their AD that they'll receive their watch in, say, 5 to 7 years from now...believe me: 90% of the time, they will *never* even see that watch ;-)
